Orange-Infused Revani Recipe

Revani is a traditional Turkish semolina cake soaked in syrup. This version, enhanced with the zest and juice of oranges, adds a refreshing citrus twist to the classic dessert.


Ingredients

For the Cake:

  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/2 cup orange juice (freshly squeezed)
  • 1 tbsp orange zest
  • 1 cup semolina
  • 1 cup all-purpose flour
  • 1 packet (10 g) baking powder
  • 1 tsp vanilla extract (optional)

For the Syrup:

  • 2 cups granulated sugar
  • 2.5 cups water
  • Juice of 1/2 an orange

For Garnish (Optional):

  • Grated coconut
  • Chopped pistachios
  • Orange slices

Instructions

Prepare the Syrup:

  1. In a medium saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
  2. Reduce the heat and let it simmer for 10 minutes.
  3. Add the orange juice, stir, and simmer for another 2 minutes.
  4. Remove from heat and let the syrup cool completely.

Make the Cake Batter:

  1. Preheat your oven to 180°C (350°F). Grease and flour a rectangular baking dish (approximately 9x13 inches).
  2. In a large mixing bowl, beat the eggs and sugar until light and fluffy.
  3. Add the oil, yogurt, orange juice, and orange zest. Mix until well combined.
  4. Gradually add the semolina, flour, baking powder, and vanilla extract, folding gently until the batter is smooth.

Bake the Cake:

  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Soak the Cake:

  1. Once the cake is baked, remove it from the oven and let it cool for 5 minutes.
  2. While the cake is still warm, evenly pour the cooled syrup over it, allowing the syrup to soak in fully.

Serve:

  1. Let the revani rest for at least 2 hours, or until the syrup is completely absorbed.
  2. Garnish with grated coconut, chopped pistachios, or orange slices as desired.
  3. Slice and serve your delicious orange-infused revani!

  • For a deeper orange flavor, increase the amount of orange zest or juice in the batter.
  • Store leftovers in the refrigerator and serve chilled or at room temperature.
