Vanilla Berry Cake Recipe

Ingredients:

For the Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (230g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup (240ml) whole milk

For the Frosting:

  • 1 cup (230g) unsalted butter, softened
  • 4 cups (500g) powdered sugar
  • 2 tsp vanilla extract
  • 3–4 tbsp heavy cream

For Decoration:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Fresh mint leaves

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. Prepare Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients.
  5. Bake: Divide the batter evenly between the prepared pans. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely.
  6. Make Frosting: Beat the butter until creamy. Gradually add the powdered sugar, vanilla, and heavy cream, beating until smooth and fluffy.
  7. Assemble: Spread frosting between the cake layers, on top, and around the sides.
  8. Decorate: Top the cake with fresh berries and mint leaves for a beautiful finish.
