Classic Vanilla Strawberry Cake Recipe

Ingredients:

For the Cake:
  • 2 ½ cups (310g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (230g) unsalted butter (softened)
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) whole milk
For the Filling and Topping:
  • 2 cups (500ml) heavy cream (chilled)
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries (sliced)
  • 50g white chocolate (melted, optional)
  • Mint leaves for garnish (optional)

Instructions:

  1. Prepare the Cake:

    • Preheat the oven to 175°C (350°F). Grease and flour two 9-inch (23 cm) round cake pans.
    • In a bowl, sift together the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, beat the butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
    • Gradually alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
  2. Bake the Cake:

    • Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
    • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  3. Prepare the Whipped Cream:

    • In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Refrigerate until ready to use.
  4. Assemble the Cake:

    • Place one cake layer on a serving plate or cake stand. Spread an even layer of whipped cream and arrange sliced strawberries on top.
    • Place the second cake layer on top and spread whipped cream over the top and sides of the cake.
    • Decorate the top with additional strawberries, a drizzle of melted white chocolate, and mint leaves if desired.
  5. Serve:

    • Chill the cake for 30 minutes before slicing for clean cuts. Serve and enjoy!
