"Honey Glazed Salmon with Citrus and Herb Quinoa".
Ingredients
For the Salmon:
- 4 salmon fillets (skin-on or skinless)
- 3 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic (minced)
- Salt and pepper (to taste)
For the Quinoa:
- 1 cup quinoa
- 2 cups vegetable stock (or water)
- 1 orange (zested and juiced)
- 1 tablespoon olive oil
- 2 tablespoons chopped parsley
- 1 tablespoon chopped mint
- Salt and pepper
Garnish:
- Thin orange slices
- Fresh parsley or microgreens
Instructions
1. Prepare the Quinoa:
- Rinse the quinoa under cold water to remove bitterness.
- In a medium pot, combine quinoa and vegetable stock. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until the liquid is absorbed.
- Fluff the quinoa with a fork and stir in orange zest, orange juice, olive oil, parsley, mint, salt, and pepper. Set aside.
2. Make the Honey Glaze:
- In a small bowl, whisk together honey, soy sauce, lemon juice, Dijon mustard, and minced garlic.
3. Cook the Salmon:
- Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet, season with salt and pepper, and brush generously with the honey glaze.
- Bake for 12-15 minutes, or until the salmon is cooked through and the glaze is caramelized. For extra caramelization, broil for the last 2 minutes.
4. Assemble the Dish:
- Spoon the citrus quinoa onto a wide, flat plate. Place the honey-glazed salmon fillet on top.
- Garnish with thin orange slices and a sprinkle of fresh parsley or microgreens.
