Cheese and Spinach Börek Recipe
Ingredients:
- 500g phyllo pastry (yufka)
- 250g feta cheese (crumbled)
- 200g spinach (chopped and lightly cooked)
- 1 medium onion (finely diced)
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 2 eggs
- 1 cup plain yogurt
- 1/2 cup melted butter or vegetable oil
- Sesame or nigella seeds (optional, for topping)
Instructions:

Prepare the Filling:
- Heat olive oil in a pan, add the diced onion, and sauté until translucent.
- Add the chopped spinach, cook until wilted, and remove from heat.
- In a bowl, combine the cooked spinach, feta cheese, black pepper, and salt. Mix well and set aside.

Prepare the Sauce:
- In a separate bowl, whisk together eggs, yogurt, and melted butter or vegetable oil until smooth.

Assemble the Börek:
- Preheat the oven to 180°C (350°F).
- Grease a baking dish with a little oil or butter.
- Lay one sheet of phyllo pastry in the dish, letting the edges hang over. Brush it with the prepared sauce.
- Layer another sheet of pastry and repeat brushing with the sauce.
- Spread an even layer of the spinach and cheese mixture.
- Continue layering phyllo sheets with sauce, adding filling after every 2–3 layers, until all the filling is used.
- Fold the overhanging edges over the top, brush with sauce, and sprinkle sesame or nigella seeds if desired.

Bake the Börek:
- Place the dish in the preheated oven and bake for 35–40 minutes, or until the top is golden brown and crispy.

- Let the börek cool for 10 minutes before slicing. Serve warm or at room temperature.
