Cheese and Spinach Börek Recipe

Cheese and Spinach Börek Recipe

Ingredients:

  • 500g phyllo pastry (yufka)
  • 250g feta cheese (crumbled)
  • 200g spinach (chopped and lightly cooked)
  • 1 medium onion (finely diced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 2 eggs
  • 1 cup plain yogurt
  • 1/2 cup melted butter or vegetable oil
  • Sesame or nigella seeds (optional, for topping)

Instructions:

  1. Prepare the Filling:

    • Heat olive oil in a pan, add the diced onion, and sauté until translucent.
    • Add the chopped spinach, cook until wilted, and remove from heat.
    • In a bowl, combine the cooked spinach, feta cheese, black pepper, and salt. Mix well and set aside.
  2. Prepare the Sauce:

    • In a separate bowl, whisk together eggs, yogurt, and melted butter or vegetable oil until smooth.
  3. Assemble the Börek:

    • Preheat the oven to 180°C (350°F).
    • Grease a baking dish with a little oil or butter.
    • Lay one sheet of phyllo pastry in the dish, letting the edges hang over. Brush it with the prepared sauce.
    • Layer another sheet of pastry and repeat brushing with the sauce.
    • Spread an even layer of the spinach and cheese mixture.
    • Continue layering phyllo sheets with sauce, adding filling after every 2–3 layers, until all the filling is used.
    • Fold the overhanging edges over the top, brush with sauce, and sprinkle sesame or nigella seeds if desired.
  4. Bake the Börek:

    • Place the dish in the preheated oven and bake for 35–40 minutes, or until the top is golden brown and crispy.
  5. Serve:

    • Let the börek cool for 10 minutes before slicing. Serve warm or at room temperature.
